Rich Cocoa Brownies (Gluten-free))

If you like rich, dark chocolately brownies then you’re in for a treat. These seriously good brownies are gluten free since they’re made with almond flour. They’re not a cakey type of brownie, just moist yet not too dense with a delicious crusty outside … perfection. There’s no leavening agent but beating the eggs till they’re light adds the right amount of structure. Use the best cocoa powder you can find for decadent results, my favourite is Barry Callebault Extra Brute. If you don’t have any coconut oil on hand you can replace it with an equal amount of butter and vice-versa, I like adding both.

Chocolate chunk caramel cookie

I felt like the standard chocolate chip cookie needed some adulting so I whipped up this grown up version of the classic favourite. I skipped the chips and chose some dark chocolate chunks, a 70% dark chocolate bar actually. To balance out the sweetness I added some Kraft caramel bits to the mix, tossed in some pecans and well,  I’ve had 5 already so I decided I better get busy writing this post before I devour them all.

Pumpkin Chocolate Chip cookies

My little guys surprised me this Thanksgiving dinner and tried some pumpkin pie and enjoyed it. With Halloween around the corner I searched for another pumpkin treat to test their tastebuds. These cookies look like Chocolate  Chip cookies but they’re soft and full of pumpkin spice flavour. They were a hit with requests for more. There’s no egg in this recipe so these can be made vegan with a butter substitute and carob chip or raisins in place of the chocolate.
