My mom always makes the best Chicken Noodle soup. I can remember as a child watching her make this delicious soup never knowing she had a secret ingredient. It was only once I was older and searching recipe books that I realized her trick of adding a whole peeled onion to the soup while cooking added such amazing flavour.
MOM’S CHICKEN NOODLE SOUP
5-6 cups chicken broth
1 whole small onion peeled
1/2 cup sliced carrots
1/4 cup sliced celery
1/2 cup chopped cooked chicken
1 cup small pasta or noodles
- Bring chicken broth to a boil, add the whole onion and vegetables cooking for about 5 minutes till carrots and celery are tender.
- Add chicken and pasta or noodles and continue boiling for 10-15 minutes until the noodles are soft.
- Remove the whole onion and enjoy.
